Our Chefs
Liz Moore, Chef and Manager Liz has already been featured both cooking and talking about food on several radio and television programmes including No Frontiers and the Fabulous Food Adventure. Before creating the Belle Isle School of Cookery she cooked for many prestigious events in Ireland and can include H.M The Queen of England as one of the more notable dignitaries to have tasted her delicious culinary delights. Liz is known throughout Ireland for her unique approach to the kitchen and through her philosophy of adopting a modern view, local ingredients will be transformed and mingled with Irish traditional recipes. Guided by her expert tuition, guests will gain the confidence to be creative and extend the boundaries of their culinary skills, in our state of the art kitchens overlooking Lough Erne.
Joe Kelly Joe is orginally from Co Fermanagh, holds a degree in culinary arts from the United States and has been a professional chef for over fifteen years. In the 1990's he was part of a group of chefs from Miami, Florida that are credited with developing "Floribbean Cuisine" which is a fusion of Caribbean and New World Cuisine. From there he moved to San Francisco and continued to broaden his culinary focus by working with the world famous Boudin Sourdough Bakery as a concept developer and chef training manager. After spending years opening and managing restaurants for others he opened his own restaurant in South Florida called Dragonfly Cafe, specializing in "Organic Global Cuisine". Three back to back hurricanes and the desire to get back to his roots convinced Joe to return to Fermanagh in 2005. In addition to teaching here at Belle Isle, Joe is a published cookbook author, a consultant for the food & catering industry and a budding organic vegetable grower.
Naseem Booth She has been a part-time lecturer for over 10 years at Fermanagh College and in 2006, inspired by her students recipes and with their help she raised funds to publish a cookery book 'Cooking Around the World.' Sales of the book have so far raised £32,000 for Charity. Naturally Naseem has a particular interest in authentic Indian Food but she is also passionate about baking and cake decoration.
Ethos Our ethos is to provide simple, flexible & practical instruction whether you enjoy gourmet cooking or simply wish to host a dinner party without fear and trepidation! Up to 12 guests are taught at any one time allowing for expert tuition in a fun and relaxing atmosphere. |
