Ingredients
2 packets ladies fingers
4 eggs, beaten
750g Mascarpone cheese
½ glass rum/marsala
½ glass whiskey
8 tlbsp caster sugar
600ml/1 pint very strong, sweetened coffee
Cocoa
Dark Chocolate for grating
Cinnamon for dusting
Method
- Beat the eggs with the sugar until it forms a stiff cream.
- Add the mascarpone and stir in gently.
- Add the glass of marsala/rum and whisk in.
- Pour the coffee and the whiskey into a shallow dish. Dip the
fingers into the mixture but only for a few seconds! Otherwise
they will get soggy very quickly and fall apart. Arrange the biscuits
on the base of a loose-bottomed tin.
Spoon over half of the mascarpone mixture, and then dust with cocoa.
Repeat layers of fingers, mascarpone and cocoa. Grate over the chocolate
and leave to chill over night. Dust with cinnamon.
