Belle Isle Brilliant Bread & Butter Pudding

Serves 6-8

Ingredients

10 slices fresh, white toasting bread
50g/2 oz butter, softened
Some apricot preserve
450ml/16 floz cream
175ml/6 floz milk
5 eggs
1 tsp vanilla essence
Freshly grated nutmeg
150g/5 oz caster sugar

Method

  • Grease a 20.5cm/8 inch dish well.
  • Butter one side of each slice and spread generously with apricot preserve. Cut off the crusts and cut each piece into 4 triangles. Arrange all the pieces in a single neat layer in the dish.
  • In a bowl lightly whisk the eggs. Add the sugar and vanilla. Stir in the cream and milk, mix well. Add the nutmeg to taste. Pour this mixture over the bread and allow to sit for at least 2 hours.
  • Preheat oven to 180C/350F/Gas 4.
  • Bake for 30-40 minutes or until gently risen and the custard is set.
