Casserole of sausages and potato

Serves 4

Ingredients

8 Bratwurst sausages or similar good quality large sausages
Olive oil
2 onions, sliced
1 clove of garlic, roughly chopped
1 400g tin of chopped tomatoes/cherry tomatoes
6 medium potatoes, peeled and quartered
Fresh thyme
Salt and pepper
Chicken stock

Method

  • Heat a little olive oil in a casserole dish and brown the sausages all over. Add the onions and the garlic. Stir well and cook for a minute or two.
  • Add the potatoes, thyme and tomatoes. Add enough stock to barely cover the mixture. Bring to a gentle simmer and cook over a low heat for 20-30 minutes or untill the potatoes are tender.
  • Serve in a large bowl with some crunchy bread.

N.B. Any sort of vegetables can be added to this in chunks. Butternut squash or pumpkin for example. You could also substitute dried pasta for the potatoes but you may need to add a little extra stock towards the end of the cooking time.

Dried chilli flakes are also delicious when added.
