Coffee Cremets with chocolate sauce
Serves 4
Ingredients
250g/9 oz cream cheese
250g/9 oz double cream
4 tablespoons very strong coffee
110g/4 oz caster sugar
For the sauce:
110g/4 oz dark chocolate
50g/2 oz unsalted butter
Method
- Line 4 100ml/3½ floz ramekins or heart shaped moulds with cheesecloth
or greaseproof paper, leaving a good edge hanging over the side.
- Beat the cheese with the sugar untill smooth and then whisk in the
cream and the coffee.
- Spoon into the ramekins and fold over the sides to cover the tops
of the puddings.
- Chill for at least 1 hour and 30 minutes.
- Unwrap the cremets and turn out onto 4 plates.
To make the sauce, place the chocolate, butter and 4 tbsp. of water into
a small pan. Melt over a gentle heat untill the sauce looks smooth and shiny.
Cool and serve with the cremets. |
