Dried fruit in an apricot syrup
Serves 4-6
Ingredients
3 pears, peeled, halved and cored
5og/2 oz ready-to-eat
prunes
50g/2 oz ready-to-eat figs
900ml/1 ½ boiling water/tea
110g/4 oz ready-to-eat apricots
75g/3 oz caster sugar
75g/3 oz flaked almonds, toasted
4 pieces of stem ginger, diced
6 cardamom pods
1 cinnamon stick
1 vanilla pod, split
Method
- Soak the apricots in the boiling water or hot tea for 30 minutes.
- Add the dried fruit, pears, sugar, almonds, ginger, cardamom, cinnamon
and vanilla. Bring to the boil. Stir well and then reduce to a simmer.
- Cook untill the pears are tender and the liquid has reduced to a syrup.
- Remove from the pot and cool.
- Chill untill needed.
Serve with thick Greek yoghurt. |
