New potatoes with a mascarpone cream
Serves 6
Ingredients
4-5 potatoes each
250g tub mascarpone cheese
25g/1 oz unsalted butter
6 cloves garlic
Sprig of thyme
5floz/150ml cream
salt & pepper
Method
- Cook the potatoes in boiling water until tender.
- Place the unpeeled garlic cloves in a small pan and barely cover with
water.
- Bring to the boil and then simmer for 2-3 minutes. Strain and cool
the cloves under cold water. (Using this method takes away the harshness
of the garlic).
- Peel the cloves and slice as finely as possible.
- Melt the butter, cream and mascarpone together. Stir in the thyme
and garlic. If the sauce is very thick, add a little more cream.
Drain the potatoes and drizzle with the mascarpone and garlic sauce. Serve
at once. |
