New World milk pudding

Serves 8

Ingredients

225g/8 oz Basmati rice
2 lt/3 ½ pt full cream milk
Honey to taste
3 Bay leaves
1 Cinnamon stick, broken in half
6 Cardamom pods, crushed
1 vanilla pod
110g/4 oz ready-to-eat apricots, finely chopped
Cream

Method

  • Heat the milk in a large saucepan over a high heat but do not allow to boil. Once the milk reaches this temperature reduce the heat. Once the milk begins to thicken, add a cup of rice and stir.
  • After 2 minutes or so, add the bay leaves, cardamom, cinnamon, vanilla pod and honey to taste, stirring every few minutes. Reduce the temperature to a very low heat. The rice will soon begin to thicken and look more like a pudding. Add cream to taste.
  • Allow to cool before serving.
